Hi, my name is Rebecca, author of Licious Lunches. I am happy to be guest blogging here at Bento Ninja today. I remember reading that a box from Bentgo was one of the first Bento Ninja tried out, so when I was offered the chance to guest post here I decided to share some of the meals I had packed in Bentgo boxes. Today’s lunches were all packed in two-tier Bentgo boxes for lunch at work.
First up is a lunch with leftover burrito fillings. One tier held carnitas, onions, and Basmati rice, while the other held shredded cheddar, cilantro, sour cream in a round Sistema container, salsa in the heart shaped container, as well as a Cutie and blackberries as sides. I added the flower rings for pretty decorations since they were easy to pop in and they coordinated with the color of the box. I also packed a Light My Fire spoon/fork combo with this lunch.
Next are two nearly matching lunches. Each include a bun for leftover barbeque chicken (packed in a separate container for heating before lunch), fruit, mini chocolate chip cookies, sugar snap peas, pasta salad, and fruit. The pasta salad was quick and simple to make. I boiled some mini penne and tossed it with balsamic dressing, feta, carrots, tomatoes, and carrots. I arranged the fruit to look a bit like flower blossoms with grapes in the center of each flower above. I also cut the apple pieces with small flower-shaped cutters and placed the pieces on stem picks. The version of the lunch above was for my husband and the one below was for me.
The last lunch I will share also has a bit of a spring/summer feel to it. Here, I packed Gala apple slices with peanut butter and granola on top alongside a couple of pieces of Granny Smith apples, yellow carrots, red pepper slices, cucumber slices, and cherub tomatoes. The other tier held a couple of butter ring cookies, almonds, a Cutie in a butterfly cup, wheat crackers with sharp cheddar cheese, and a couple of hard candies. I included butterfly, flower, and dragonfly picks to coordinate with the napkin I included.
